L’Amarone della Valpolicella Classico di Zenato riflette fedelmente i caratteristici attributi della tipologia, vale a dire calore, avvolgenza e morbidezza, pur riuscendo a non risultare pesante o stancante. La tenuta Zenato rappresenta uno dei nomi storici del Veronese, fondata da Sergio Zenato nel 1960 e oggi guidata dai figli Alberto e Nadia con il supporto della madre Clara. La sede della cantina è ubicata a Peschiera del Garda, sulla sponda veneta del Lago di Garda, dove con passione e precisione la famiglia si rende protagonista di una produzione ampia basata sulle denominazioni del territorio. Zenato Amarone della Valpolicella Classico nasce da un assemblaggio dei vitigni tradizionali Corvina Veronese (80%), Rondinella (10%), Oseleta (5%) e Croatina (5%), varietà coltivate nei vigneti del comune di Sant’Ambrogio. A seguito della raccolta manuale, eseguita a perfetta maturazione con una rigorosa selezione dei grappoli, le uve vengono poste in appassimento controllato in fruttaio per 4 mesi, durante i quali gli acini perdono acqua concentrando il contenuto di sostanza secca. A gennaio si procede quindi con la pigiatura, alla quale segue una lenta fermentazione alcolica sulle bucce in vasche di acciaio inox. La fase di invecchiamento di 36 mesi ha invece luogo in botti grandi di rovere di Slavonia e dopo un ulteriore anno di affinamento in bottiglia il vino è infine pronto per l’uscita sul mercato. L’Amarone della Valpolicella Classico della cantina a conduzione famigliare Zenato ha un colore rosso rubino molto intenso e consistente. Inebrianti e articolati richiami di ciliegia matura, quasi sotto spirito, frutti di bosco, pot-pourri, mentuccia, cacao e caffè caratterizzano la gamma olfattiva. L’importante calore e la morbidezza avvolgente all’assaggio risultano ben sostenuti da ottima freschezza e tannini maturi.
